The meat should be similar enough, for what it's worth. Once we peeled away the armored plating, the flesh wasn't terribly dissimilar to ordinary bulls.
Certainly closer to the genuine article than those watermelon apples, at any rate.
As for other humans, I've wondered the same thing myself. The vision I received and those shared by other drifters suggest that the Wardens were rather set on assimilating anyone they could to their cause. If anyone does remain unaffiliated, they would have likely had to seek refuge.
